Alambadi is one of Tamil Nadu's rarest native cattle breeds, found around the Dharmapuri and Hosur forest belt, and the herd numbers are small enough that the breed is considered threatened. The cows are pasture-raised on grazing alone, with no artificial feed.
Buying ghee from a native breed like this does something ordinary ghee does not: it gives the breed a reason to survive. Farmers keep the cattle that earn.
Use it on rice, in sweets and for tempering. It solidifies in cool weather, which is normal. Keep it dry, use a clean spoon, and it does not need refrigeration.
