Kichili Samba is the rice Athur in Salem district is known for. The name comes from kichili, the citrus fruit, because of the light aroma the cooked grain gives off. It is grown here by natural farming methods.
It also makes very good biryani and pulao, where the fragrance has room to show. The most affordable rice in this range, and a good place to start if you have not cooked traditional rice before. Soak for about two hours.
