Thuyamalli is white rather than red, with a light jasmine fragrance that the name refers to. Of all the traditional rices here it is the closest in look and feel to the polished white rice most households are used to, which makes it the easiest switch.
It has a low glycemic index and carries protein, fibre and minerals, but eats like an ordinary rice. If someone at home is resistant to changing the rice, start here and move to the red varieties later.
Can be cooked as plain rice, kanji, puttu or pongal. Soak for about two hours before cooking.
