Mudakathan is best known through mudakathan keerai dosai, eaten in Tamil homes specifically for joint comfort. Its Tamil name comes from 'mudakku', to stiffen or bend, which tells you what it has long been associated with. Here the dried leaf is ground with pepper, cumin, cinnamon, cloves and turmeric.
Add one tablespoon to a cup of water, boil for about five minutes, strain, and season with salt and pepper to taste.
Stronger in flavour than the moringa soup, with a faint bitterness that the pepper balances.
