Kombu then comes from combs the bees build hanging in the open on tree branches, rather than tucked into a rock cavity or a hollow. Harvesting one means climbing to it, which is why it costs more than hill honey and why the quantity is always limited.
The flavour is distinctly floral and lighter than hill honey. It is unprocessed – not heated or filtered clear – so it may crystallise in the jar. That is normal; warm the jar gently in water to loosen it.
Best eaten raw so the aroma is not lost. Do not add it to boiling liquid. Not suitable for children under one year of age.
