Malai Honey (Hill Honey)

Collected from natural combs in hill forests rather than from managed boxes, which is why the colour and flavour vary from batch to batch – the bees forage on whatever is flowering that season, and no two harvests taste identical.

It is unprocessed: not heated, not filtered to clarity, not blended to a standard colour. That means it may crystallise over time. Crystallisation is a sign of real honey rather than of spoilage – stand the jar in warm water and it will loosen.

Take it by the spoon, in warm water, or over fruit. Do not stir it into boiling liquid. Not suitable for children under one year of age.
